Try It Thursday!

Thai Chicken Pumpkin Soup

12 chicken tenders
garlic salt
black pepper
4 tablespoons butter
2 onions
4 cloves garlic, crushed
2 cups water
2 (29 oz. cans) pureed pumpkin
2 (14 oz. cans) coconut milk
2 (15 oz. cans) coconut cream
fresh grated zest of 2 whole lemons
2 tablespoons fish sauce
dried red pepper flakes, to taste

Season chicken tenders with garlic salt and black pepper and cook in butter in a frying pan over medium heat until softly done; do not overcook. Set aside and cool, then shred or tear into small pieces. In the same frying pan, that still contains the browned chicken juices and butter, saute onions and garlic until onions are soft. Scrape all onion mixture into a blender with the water and blend until almost smooth, not quite, want some small texture to remain. Pour into a large crock pot. Stir in the rest of the ingredients. Cook at low heat until heated through.

Kellie's Grandma's Rolls


Rolls
1 cup shortening/ or butter
1 cup boiling water
3/4 cup sugar
2 tsp. salt
2 Tblsp yeast in 1/2 cup very warm water
1 cup cold water
3 large eggs, beaten
7 1/2 cup flour
Mix in bowl that has a lid and will hold 18 cups. Pour boiling water over shortening and sugar and salt. Allow to melt. Meanwhile, soften yeast in water. Add cold water to large bowl. Then eggs, then the yeast. Whisk in 4 cups of flour. Stir in the rest of the flour with a wooden spoon. The dough will be sticky. Cover with lid and refrigerate overnight or at least four hours.
Remove from fridge and divide dough into quarters. Using one quarter of dough at a time, roll into a 14 inch circle. Spread with softened butter and cut into 12 or 16 wedges like a pizza. Roll up from the wide end into crescents. Place on greased cookie sheet and let rise until doubled.
Bake at 350 for 12-15 minutes or until light brown. Brush tops with melted butter while hot. Remove to cooling rack. Store in airtight container to keep soft. The dough will keep for a week in the fridge so you can make just as many as you need for dinner each night.

Tomato and Cucumber Salad

2 chopped tomatoes
2 sliced cucumbers
1/2 c chopped onion
1/4 c cider vinegar
2 TBSP vegetable oil
1/2 tsp dried basil
1/4 tsp garlic powder
1/2 tsp salt

Place tomatoes, cucumbers, and onion in a large bowl. In a small bowl, whisk together the rest of the ingredients; pour over tomato mixture and toss. Cover and refrigerate for 1 to 2 hours.

Try It Thursday!

Creamy Tomato Basil Soup

4 c. fresh tomatoes pureed
or 2 cans Italian Tomatoes blended
1 green pepper seeded
1 tsp. onion powder
1/2 tsp. basil
2 tsp. olive oil
4 c. chicken broth
1 c. heavy cream
1 tsp. salt
1/2 tsp. thyme
3/4 c. butter divided
4 tbsp. tomato paste
1/4 c. flour
1 tsp. sugar
1/4 tsp. pepper

Dip tomatoes in boiling water for 30 seconds. Take out and remove peel. Put into blender, mix with seeded green pepper. Blend until you have 4 cups.

In a large pot melt 1/2 c. butter, add flour mix until smooth. Add - thyme, basil, and olive oil until it melts. Add tomatoes and paste, simmer for 30 minutes stirring frequently. Just before serving add sugar, cream, and 1/4 c. butter and salt and pepper to taste.

Makes 8-10 cups.

Crock Pot Triple Chocolate Cake

1 Chocolate Cake Mix
1 Pint Sour Cream
1 3 1/2 oz. pkg. Choc. Instant Pudding
12 oz. pkg. Chocolate Chips
3/4 c. Vegetable Oil
4 eggs
1 c. Water

Spray slow cooker with Pam. Combine ingredients and pour in. Cook for 4-5 hrs. on low.

Try It Thursday!


Zucchini Brownies


2 c grated zucchini
1 tsp salt
1/3 c cocoa
1 c sugar
1/2 c chopped nuts
2 c flour
1 1/2 tsp soda
1/2 c oil
2 tsp vanilla


Mix sugar, oil, and vanilla - add zucchini. In another bowl mix cocoa and flour - then add rest of ingredients. Bake at 350 for 18-20 minutes. Top with chocolate frosting.

Sister Spotlight

Tammie Foote - she grew up in Warkegan, Illinois. She and her husband have four children: one boy and three girls. They have nine going on ten grandchildren.

Tammie loves to read and is self-taught. She works with her husband, business owners and she is a secretary. Some of her hobbies include: gardening, and remodeling their old house. If she were to star in a movie she says it would be "The Money Pit".

A funny story - "When I was a business owner, my husband worked for me. We were in a lot of senior citizen's homes, and often the man would say to my husband, "I see you brought the little woman." My reply was always, "No, I brought the little man."

Raspberry Strawberry Bread

3 cups all purpose flower
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. vanilla
2 cups sugar
2 cups sliced strawberries
1/2 cup raspberries
4 eggs, beaten
1 cup cooking oil

Mix by hand. Add the berries at the last.

Bake at 350 degrees for 35-45 minutes in small loaf pans, or about 60 minutes in 2 large loaf pans. Remember each oven is different, so make sure and UNDER-SET your timer, so you don't over bake the bread!

Sister Spotlight

Carrie Gallman's hometown is Sandy, Utah. She and her husband have five daughters, one son, and two dogs.

She was able to serve a full time mission in San Bernadino, California. Carrie got her degree in Special Education from BYU and used to teach resource at elementary schools. Now she stays home and just wishes for more time in the day.

As for her hobbies - Carrie says she is trying to convince herself that she LOVE's doing laundry and constantly feeding people. Other than that she enjoys activities with the kids, reading, camping, and writing. A few of her favorite things are: cookies and brownies, game shows, and she likes watching sports, but not playing them.

The craziest thing Carrie has done lately is getting colored elastics on her bottom braces, very wild. If she starred in a movie she'd like to be Sleeping Beauty! But, she says she'd probably be better suited to being a guest on Dr. Phil so he can help sort herself out!

Cheese Steak Subs

*Makes about 4 sandwiches (more if you are serving kids and can get away with putting less meat on their sub)

2 tbl butter
1 onion, halved and sliced into thin half moons
2 garlic cloves, finely minced
1/4 tsp dried oregano
2 tbl A-1 steak sauce
1 pound deli roast beef, cut into 2-inch strips
Salt and pepper
4 (6-inch) sub rolls, split partially open lengthwise
8 slices provolone cheese

Preheat the broiler in your oven and adjust the rack to the upper-middle position. Meanwhile, in a large skillet, melt the butter. Add the onion and cook until softened and golden, about 8 minutes. Stir in the garlic and oregano and cook for a minute, until it smells fragrant. Add the A-1 sauce and the beef, stirring well to coat the beef with the sauce and onion/butter mixture. Cook until the meat is heated through, about 2 minutes. Season with salt and pepper.

Place the sliced rolls on a rimmed baking sheet. Divide the beef mixture among the rolls. Top with the cheese and broil until the cheese is melted, about 2 minutes (don't even take your hand off the oven door handle - stand right there so they don't burn! Serve immediately.

Cottage Cheese Pancakes

1 cup cottage cheese
4 eggs
1/2 cup flour
6 tbsp melted butter

Whip cottage cheese, eggs, flour and melted butter in a blender. This should be a thick batter. Test a small amount of batter on grill. Add a small amount of flour if it needs thickening. Make the pancakes about four inches in diameter.

Cook pancakes until golden, then flip and cook for an additional minute. Do not overcook. These pancakes are moist and should spring to the touch.

Enjoy with your favorite syrup, butter and powdered sugar!

Dutch Oven Apple Crisp

2 cans apple pie filling
1 white cake mix
1 cube butter
Cinnamon

Mix together cake mix and butter until mixture looks like cornmeal. Put pie filling in bottom of dutch oven. Spread cake mixture over the top of the pie filling. Sprinkle with cinnamon. Bake at 350 degrees for 45 minutes. 12 coals on top and 8 on bottom.

Orange Julius

1/2 cup orange juice concentrate
2 cups milk
1/3 cup sugar
1 tsp. vanilla
crushed ice cubes

Blend first four ingredients in blender. To crush ice cubes, place ice cubes in plastic bag and then paper bag. Gently pound with side of rolling pin. Add crushed ice to mixture and blend. Continue adding ice until mixture reaches desired thickness.

Hot Pizza Dip

1 package (8 oz.) cream cheese, softened
1 tsp. Italian Seasoning Mix
1 cup shredded mozzarella cheese
3/4 cup grated fresh Parmesan cheese
1 can (8 oz.) pizza sauce
1/4 cup diced green bell pepper, sliced green onions or chopped pitted olives

Preheat oven to 350 degrees. In small bowl, combine cream cheese and seasoning mix; spread onto bottom of small baking dish. In small bowl, combine Mozzarella and Parmesan cheeses. Sprinkle half of the mozzarella cheese mixture over cream cheese mixture. Top with pizza sauce, spreading evenly. Sprinkle with remaining Mozzarella cheese mixture. Bake 15-20 minutes or until bubbly. Top with bell pepper. Serve with toasted baguette slices.

Death By Chocolate Bundt Cake

3/4 cup sour cream
4 eggs
1/2 cup water
1/2 cup oil
1 pkg. Devils Food cake mix
1 small instant chocolate pudding mix
1 cup semi sweet chocolate chips

Beat sour cream, eggs, water, and oil together. Add cake mix and pudding and stir in chocolate chips. Place in a greased bundt pan and bake at 350 for 45-55 minutes. When it is done; cool a little, turn out of pan onto serving dish and sprinkle with powdered sugar.

2 bananas, peeled and cut into 1" thick slices
1 cup orange juice

Crockpot Creamy Italian Chicken

4 boneless skinless chicken breasts halves
1 envelope Italian salad dressing mix
1/4 cup water
1 pkg. cream cheese, softened
1 can cream of chicken soup, undiluted
1 can (4 oz.) mushroom stems and pieces, drained
Hot cooked rice or noodles

Place chicken in slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on low heat 3 hours. In a small mixing bowl, beat cream cheese and soup until blended. Stir in mushrooms. Pour over chicken. Cook 1 hour longer until chicken juices run clear. Serve with rice or noodles.

Cowboy Stew

1 lb. ground beef, browned and drained
1/4 tsp. garlic powder
1 tsp. salt
1/4 tsp. pepper
6 medium potatoes, peeled and sliced
1 medium onion, sliced
2 cans cream of mushroom soup or 2 cans cream of chicken soup
1 cup water

Mix beef with garlic powder, salt and pepper. Place 1/2 of the onions and 1/2 of the potatoes in bottom of slow cooker. Add beef. Top with remaining onions and potatoes. Top with a mixture of soup and water. Spread over top making sure to cover evenly. Cover and cook on low 8 - 10 hours.

Recipes from Nutrition SNO

Almond Snack

1 C. almonds
1/2 C. craisins (or raisins)
1 T. honey
1 T olive oil or coconut oil

Blend in food processor to desired consistency.
I added a little more honey to mine because I like it sticking together and eat it on crackers and celery.

Homemade Graham Crackers (easy as making cookies)

2 1/4 cup freshly ground wheat flour
1/2 tsp salt
1 tsp baking soda
1/3 cup brown sugar
1/3 cup butter
1/4 cup warmed honey
3 Tbs water

1. Preheat oven to 375 degrees.
2. Combine dry ingredients in a bowl.
3. Cut in butter.
4. Warm the honey and water together in microwave for about 20-30 seconds. Add to dry ingredients and blend well. If dough seems too stiff, add a little water.
5. Roll out on a greased cookie sheet to 1/4 inch thickness (the thinner, the better). Prick dough with a fork all over.
6. Bake for 8-10 minutes until slightly browned. Remove from oven and cut immediately (it will be too hard later).
7. Cool and enjoy!

Oat & Honey Granola Recipe

Yum...Granola! This is so yummy and easy to make. You'll love it. :)

3/4 cup brown sugar
1/3 cup oil (I use extra virgin olive oil)
1/3 cup honey (tip: use the same measuring cup as the oil and your honey won't stick)
5 cups rolled oats
1 tsp. cinnamon
1/2 tsp. salt

1. Preheat oven to 375 degrees.
2. Heat a large pot on the stove to med-high heat. Put in the oil, brown sugar, and honey. Bring to a boil and heat until the sugar is dissolved.
3. In the mean time, measure out your dry ingredients in another bowl and give them a stir.
4. When sugar is dissolved add in the dry ingredients and mix well!
5. Spread out on a large, greased cookie sheet with sides (I use the 1/2 sheet size).
6. Bake at 375 for 10-11 minutes. Do not overbake.
7. Let it cool in the pan and stir it every once in a while. If you don't stir it, it'll turn into one big chunk (which is still yummy but harder to eat).

You can also add in nuts, dried fruit, seeds, wheat germ, coconut, or whatever else you think would taste good.

Tip: I have found that different brands of oats change the flavor of the granola significantly. I like the Quaker rolled oats the best. I get them at Costco. Don't use quick oats!

Yummy Hummus Recipe

2 c. chickpeas (garbanzo beans), rinsed and drained
1/4 c. tahini (sesame paste)
1/4 c. water
1/6 c. olive oil
2 cloves garlic, minced
3 T. lemon juice
3/4 tsp. salt
1 T. cumin powder

Place all ingredients into a food processor or blender and process until very smooth. Refrigerate in an air-tight container for 7-10 days.

6 servings (1/3 c. each)

Nutritional info.: Fat--12.8 g./Carbohydrates--21.2 g/Calories--215.9/Protein--5.8g.

I've made it before with about half of the tahini, which will reduce the calorie count quite a bit. Also, when I made if for RS, I only used one garlic clove and about half of the cumin because I didn't want it to be too strong.

Try It Thursday!

Pumpkin Puff Pancakes

2 eggs
1 c. milk
1/2 c. cooked (canned) pumpkin
2 Tbsp. sugar
1/4 c. salad oil
1 3/4 c. Bisquick
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger

Beat eggs in small bowl on high speed for 5 minutes or until thick. Stir in remaining ingredients just until moistened. Pour batter by tablespoonfuls onto hot griddle. Serve with hot apple cider syrup.


Apple Cider Syrup

1 c. sugar
2 Tbsp. heaped cornstarch
1/2 tsp. cinnamon
2 c. apple cider or juice
2 Tbsp. lemon juice
1/4 c. butter

Mix sugar, cornstarch, and spice in a medium saucepan. Stir in cider and lemon juice. Cook, stirring constantly, until mixture thickens and boils 1 minute. Remove from heat and blend in butter. Serve warm over pumpkin pancakes.

Pretzel Salad

Crust:
2 cups finely crushed pretzels
3/4 cup melted margarine or butter
3 T. sugar

Combine all ingredients and spread in a 9x13 pan. Bake at 400 degree for 8 minutes. Cool completely.

Filling:
8 oz. cream cheese
1 cup sugar
8 oz. cool whip

Beat cream cheese and sugar. Add cool whip and spread on cooled crust. Refrigerate for 1 hour.

Topping:
6 oz. red Jello
16 to 12 oz. frozen strawberries or raspberries
2 cups boiling water

Dissolve Jello and cool, but don't let Jello set completely. Add strawberries or raspberries and spread over filling. Refrigerate 4 hours.

Quick Chicken Noodle Soup

2 boneless, skinless chicken breast halves
1 cup water
2 tsp. chicken bouillon
1/4 tsp. paprika
4 carrots, peeled and sliced
3 ribs celery, sliced
1 onion, chopped
1 Tbsp. parsley flakes
2 cups water
3 cups egg noodles

Place chicken in water in soup pot. Sprinkle with bouillon and paprika. Add vegetables in order given. Sprinkle with parsley flakes. Cover and cook 30 minutes. Add 2 cups water. Bring soup to a full boil. Add egg noodles and cook 10-12 minutes or until noodles are done. Cut chicken into bite-sized chunks.

Cafe Rio Rice Recipe


Cafe Rio Rice

2 cups rice
4 cups water
4 tsp chicken bouillon
4 tsp minced garlic
1/2 bunch chopped cilantro
1 can green chili's diced
3/4 tsp salt
1 Tbsp butter
1/2 chopped onion

Sauté onion, garlic with the butter until the onion is soft. Add rice and water and all the other stuff and bring to a boil. After it begins to boil, reduce heat to low, cover with lid, and simmer for about 20 minutes. Turn off heat and let sit for 5-10 minutes.

Chicken Tostada Upside Down Bake

2 tbl extra virgin olive oil
1 med onion, finely chopped
2 cloves fresh garlic, minced
4 small or 3 large boneless skinless chicken breasts, shredded lightly
1 can diced tomatoes
1 can corn, drained
1 can black beans, drained
1 can black olives, chopped
1 packet ranch dressing seasoning packet
1 1/2 tbl ground cumin
1/2 cup fresh chopped cilantro
1 can Pillsbury Crescent Rolls
1 tbl extra virgin olive oil
1/4 tsp garlic salt
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Heat oil in large pot over medium heat. Saute onions for 5 minutes then add in garlic' cook for an additional minute. Add chicken, tomatoes, corn, black beans, olives, ranch seasoning and cumin. Stir and cook for 5 minutes, until heated through, then stir in cilantro. Pour into a 9x13 inch baking dish that's been sprayed with non stick cooking spray. Place Crescent Rolls over top of chicken mixture, brush lightly with olive oil and season with garlic salt. Bake for 20 minutes, until just starting to brown. Top with cheese and bake for and additional 15-18 minutes or until cheese is melted and crescent dough is cooked through. Remove and let cool 10 minutes before serving.

Serve with shredded lettuce and sour cream if desired.

Pork Barbakoa

2 lbs Pork Tenderloin
1 can diced green chiles
1 can cola
2/3 c. brown sugar
1 tsp. garlic powder
1 tsp salt
1 tsp chili powder

Combine ingredients in slow cooker on low for 4 hours. Shred in cooker. Cook additional 1-2 hours.
(I purchased the pork lion at Costco, it was $16 and looks like two long loins but is actually 4 pieces. This recipe is for only one, double as necessary.

"Good Water"

5 Qt. Water
3 c. sugar
1 TB citric acid
1 TB pure lemon extract
1 Bag of ice from Sonic drive in
Orange and lemon slices

(I bought lemon and citric acid at Orson Gigi).
Combine ingredients in large punch bowl. Stir well.
Let sit for a few minutes. Mix again. Add ice and fruit.

Layered Chocolate Dessert - Sister Bradley
Served @ the Relief Society Birthday Dinner

Combine:
1 cube of butter or margarine
1 cup flour
1 cup finely chopped walnuts or pretzels
Mix well and pat firmly into a 9x13 pan, bottom only. Bake at 350 for 20 minutes. Cool.

Combine:
8 oz. pkg. cream cheese, softened
1 cup powdered sugar
1 generous cup Cool Whip
Spread carefully on cooled crust

Mix Together:
1 sm. pkg. instant chocolate pudding
1 sm. pkg. instant vanilla pudding
3 cups cold milk
Pour over the cream cheese mixture and p0lace in fridge to let set up. Spread the rest of the cool whip on top and chill at least 2 hours. Kellie Magleby had this dessert the first night she was in the mission field.

Potato Bacon Soup

1 lb. bacon - cut in small pieces
1 small onion, finely diced
4 cups potatoes, cubed
2 cans cream of chicken soup
2 1/2 cups milk
16 oz. sour cream
2 cans of corn - drained

In a large stockpot, cook bacon until almost crisp then add onion and continue to cook until the onion is soft and bacon is crisp. Drain most of the grease. Add the cubed potatoes to the bacon and onion and cook about 20 minutes or until potatoes are tender. Add soup, milk and sour cream and heat through. Then add corn, turn heat to low and simmer for at least 20 minutes until thick and creamy. Cook no longer than 40 minutes.

Try It Thursday!

Chicken Tortellini Bake

16 ounce package of cheese tortellini
1 tbs oil
2 cups chicken cut up into bite size pieces
3 green onions finely chopped, white and green parts
2 tbs flour
1 cup chicken broth
8 ounces sliced fresh mushrooms
3/4 cup reduced fat sour cream
2 cups shredded Monterrey Jack cheese

Bring a pot of water to boil and cook your tortellini for a few minutes. Drain and set aside. Heat your oil in a large nonstick skillet, and add chicken pieces and cook for 2-3 minutes. Then add the mushrooms and green onions till chicken is cooked through and the veggies are softened. Sprinkle the flour over the mixture and stir for a few minutes. Next add the chicken broth, and stir till thickened. Then add sour cream, and let sit till it is warmed through, and creamy.

Spray 9 by 13 pan with cooking spray. Add the tortellini, half the cheese, the chicken mixture, and then the rest of the cheese. Cover with foil and bake at 350 degrees for 30 minutes, then uncover and bake for 15 more minutes till it is bubbly.

Swiss Crockpot Chicken

4-6 skinless boneless chicken breasts
6 slices swiss cheese
1-2 cans cream of chicken soup
1 can chicken broth
1/4 cup milk
1/2 stick melted butter
1 pkg. Stove Top Stuffing (chicken)
Salt & Pepper to taste

Place chicken breasts in slow cooker. Season with salt and pepper. Layer Swiss cheese over chicken. Mix soup, broth and milk. Pour over chicken breasts. Sprinkle stuffing on top. Pour melted butter over stuffing. Cook on low 5-7 hours.

Tiffany's Pumpkin Cookies

1 large can of pumpkin
1 spice cake mix
1 yellow cake mix
1 bag of chocolate chips
1 bag of cinnamon chips

Mix all ingredients together. Drop by spoonful onto cookie sheet. Bake at 385 degrees for 12 - 14 minutes. Enjoy!

Keri Thompson
I grew up in Madison, Wisconsin. I have 4 brothers and 1 sister. I loved doing pottery in high school. I went to BYU and graduated in Art Education. I served a mission in Geneva, Switzerland and speak french. I taught High School Art for 3 years at an alternative high school in Provo. I've been married for almost 14 years and have 3 boys. Our family loves spending time reading together and going to Yellowstone a couple of times each year. I enjoy hiking, cross country skiing, re-arranging the furniture in my house (my kids have asked my husband several times: why does mom keep moving the furniture around? he just smiles and says because she needs to--I have a wonderfully patient and good natured husband), and playing with my kids.
I am serving in the Young Women's and love the girls who are in there.

Garlic Chicken

12-oz. wide egg noodles
3 Tbsp. olive or vegetable oil
1 pound chicken, cut into 1-inch strips
2 garlic cloves, minced
1/4 cup water
4 green onions, chopped
1 Tbsp. butter
1/2 cup Parmesan cheese

Cook noodles according to package directions. While noodles are cooking, heat oil. Stir-fry chicken in oil until it turns white. Add garlic and green onions and continue stir-frying 3-4 minutes. Reduce temperature and add water. Allow chicken to steam until noodles are ready. Drain noodles. Dot with butter and sprinkle with salt. Fold noodles into chicken mix. Stir in Parmesan cheese.

Try It Thursday!

Crock Pot Lasagna-

8 lasagna noodles, uncooked
1 lb. ground beef
1 tsp. Italian seasoning
1 (28 oz.) jar spaghetti sauce
1/3 c. water
16 oz. cottage cheese
2 c. shredded mozzarella cheese

Break noodles. Place half of the noodles in bottom of greased slow cooker. Brown beef and drain. Stir Italian seasoning into meat and spread half over the noodles already in slow cooker. Layer half of the sauce and water, half of cottage cheese, and half of mozzarella cheese over beef. Repeat layers. Cover and cook on low heat 5 hours.
