Potato Bacon Soup

1 lb. bacon - cut in small pieces
1 small onion, finely diced
4 cups potatoes, cubed
2 cans cream of chicken soup
2 1/2 cups milk
16 oz. sour cream
2 cans of corn - drained

In a large stockpot, cook bacon until almost crisp then add onion and continue to cook until the onion is soft and bacon is crisp. Drain most of the grease. Add the cubed potatoes to the bacon and onion and cook about 20 minutes or until potatoes are tender. Add soup, milk and sour cream and heat through. Then add corn, turn heat to low and simmer for at least 20 minutes until thick and creamy. Cook no longer than 40 minutes.

Try It Thursday!

Chicken Tortellini Bake

16 ounce package of cheese tortellini
1 tbs oil
2 cups chicken cut up into bite size pieces
3 green onions finely chopped, white and green parts
2 tbs flour
1 cup chicken broth
8 ounces sliced fresh mushrooms
3/4 cup reduced fat sour cream
2 cups shredded Monterrey Jack cheese

Bring a pot of water to boil and cook your tortellini for a few minutes. Drain and set aside. Heat your oil in a large nonstick skillet, and add chicken pieces and cook for 2-3 minutes. Then add the mushrooms and green onions till chicken is cooked through and the veggies are softened. Sprinkle the flour over the mixture and stir for a few minutes. Next add the chicken broth, and stir till thickened. Then add sour cream, and let sit till it is warmed through, and creamy.

Spray 9 by 13 pan with cooking spray. Add the tortellini, half the cheese, the chicken mixture, and then the rest of the cheese. Cover with foil and bake at 350 degrees for 30 minutes, then uncover and bake for 15 more minutes till it is bubbly.

Swiss Crockpot Chicken

4-6 skinless boneless chicken breasts
6 slices swiss cheese
1-2 cans cream of chicken soup
1 can chicken broth
1/4 cup milk
1/2 stick melted butter
1 pkg. Stove Top Stuffing (chicken)
Salt & Pepper to taste

Place chicken breasts in slow cooker. Season with salt and pepper. Layer Swiss cheese over chicken. Mix soup, broth and milk. Pour over chicken breasts. Sprinkle stuffing on top. Pour melted butter over stuffing. Cook on low 5-7 hours.

Tiffany's Pumpkin Cookies

1 large can of pumpkin
1 spice cake mix
1 yellow cake mix
1 bag of chocolate chips
1 bag of cinnamon chips

Mix all ingredients together. Drop by spoonful onto cookie sheet. Bake at 385 degrees for 12 - 14 minutes. Enjoy!
