Try It Thursday!

Pretzel Salad

Crust:
2 cups finely crushed pretzels
3/4 cup melted margarine or butter
3 T. sugar

Combine all ingredients and spread in a 9x13 pan. Bake at 400 degree for 8 minutes. Cool completely.

Filling:
8 oz. cream cheese
1 cup sugar
8 oz. cool whip

Beat cream cheese and sugar. Add cool whip and spread on cooled crust. Refrigerate for 1 hour.

Topping:
6 oz. red Jello
16 to 12 oz. frozen strawberries or raspberries
2 cups boiling water

Dissolve Jello and cool, but don't let Jello set completely. Add strawberries or raspberries and spread over filling. Refrigerate 4 hours.

Try It Thursday!

Quick Chicken Noodle Soup

2 boneless, skinless chicken breast halves
1 cup water
2 tsp. chicken bouillon
1/4 tsp. paprika
4 carrots, peeled and sliced
3 ribs celery, sliced
1 onion, chopped
1 Tbsp. parsley flakes
2 cups water
3 cups egg noodles

Place chicken in water in soup pot. Sprinkle with bouillon and paprika. Add vegetables in order given. Sprinkle with parsley flakes. Cover and cook 30 minutes. Add 2 cups water. Bring soup to a full boil. Add egg noodles and cook 10-12 minutes or until noodles are done. Cut chicken into bite-sized chunks.

Cafe Rio Rice Recipe


Cafe Rio Rice

2 cups rice
4 cups water
4 tsp chicken bouillon
4 tsp minced garlic
1/2 bunch chopped cilantro
1 can green chili's diced
3/4 tsp salt
1 Tbsp butter
1/2 chopped onion

Sauté onion, garlic with the butter until the onion is soft. Add rice and water and all the other stuff and bring to a boil. After it begins to boil, reduce heat to low, cover with lid, and simmer for about 20 minutes. Turn off heat and let sit for 5-10 minutes.

Chicken Tostada Upside Down Bake

2 tbl extra virgin olive oil
1 med onion, finely chopped
2 cloves fresh garlic, minced
4 small or 3 large boneless skinless chicken breasts, shredded lightly
1 can diced tomatoes
1 can corn, drained
1 can black beans, drained
1 can black olives, chopped
1 packet ranch dressing seasoning packet
1 1/2 tbl ground cumin
1/2 cup fresh chopped cilantro
1 can Pillsbury Crescent Rolls
1 tbl extra virgin olive oil
1/4 tsp garlic salt
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Heat oil in large pot over medium heat. Saute onions for 5 minutes then add in garlic' cook for an additional minute. Add chicken, tomatoes, corn, black beans, olives, ranch seasoning and cumin. Stir and cook for 5 minutes, until heated through, then stir in cilantro. Pour into a 9x13 inch baking dish that's been sprayed with non stick cooking spray. Place Crescent Rolls over top of chicken mixture, brush lightly with olive oil and season with garlic salt. Bake for 20 minutes, until just starting to brown. Top with cheese and bake for and additional 15-18 minutes or until cheese is melted and crescent dough is cooked through. Remove and let cool 10 minutes before serving.

Serve with shredded lettuce and sour cream if desired.

Pork Barbakoa

2 lbs Pork Tenderloin
1 can diced green chiles
1 can cola
2/3 c. brown sugar
1 tsp. garlic powder
1 tsp salt
1 tsp chili powder

Combine ingredients in slow cooker on low for 4 hours. Shred in cooker. Cook additional 1-2 hours.
(I purchased the pork lion at Costco, it was $16 and looks like two long loins but is actually 4 pieces. This recipe is for only one, double as necessary.

"Good Water"

5 Qt. Water
3 c. sugar
1 TB citric acid
1 TB pure lemon extract
1 Bag of ice from Sonic drive in
Orange and lemon slices

(I bought lemon and citric acid at Orson Gigi).
Combine ingredients in large punch bowl. Stir well.
Let sit for a few minutes. Mix again. Add ice and fruit.

Layered Chocolate Dessert - Sister Bradley
Served @ the Relief Society Birthday Dinner

Combine:
1 cube of butter or margarine
1 cup flour
1 cup finely chopped walnuts or pretzels
Mix well and pat firmly into a 9x13 pan, bottom only. Bake at 350 for 20 minutes. Cool.

Combine:
8 oz. pkg. cream cheese, softened
1 cup powdered sugar
1 generous cup Cool Whip
Spread carefully on cooled crust

Mix Together:
1 sm. pkg. instant chocolate pudding
1 sm. pkg. instant vanilla pudding
3 cups cold milk
Pour over the cream cheese mixture and p0lace in fridge to let set up. Spread the rest of the cool whip on top and chill at least 2 hours. Kellie Magleby had this dessert the first night she was in the mission field.
