All of us can become discouraged. It is important to know, when you feel down, that many others do also and that their circumstances are often much worse than ours. And it is important to know that when one of us is down, it becomes the obligation of his friends to give him a lift.

Sister Spotlight

Tammie Foote - she grew up in Warkegan, Illinois. She and her husband have four children: one boy and three girls. They have nine going on ten grandchildren.

Tammie loves to read and is self-taught. She works with her husband, business owners and she is a secretary. Some of her hobbies include: gardening, and remodeling their old house. If she were to star in a movie she says it would be "The Money Pit".

A funny story - "When I was a business owner, my husband worked for me. We were in a lot of senior citizen's homes, and often the man would say to my husband, "I see you brought the little woman." My reply was always, "No, I brought the little man."

Try It Thursday!


Raspberry Strawberry Bread

3 cups all purpose flower
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. vanilla
2 cups sugar
2 cups sliced strawberries
1/2 cup raspberries
4 eggs, beaten
1 cup cooking oil

Mix by hand. Add the berries at the last.

Bake at 350 degrees for 35-45 minutes in small loaf pans, or about 60 minutes in 2 large loaf pans. Remember each oven is different, so make sure and UNDER-SET your timer, so you don't over bake the bread!

Sister Spotlight

Carrie Gallman's hometown is Sandy, Utah. She and her husband have five daughters, one son, and two dogs.

She was able to serve a full time mission in San Bernadino, California. Carrie got her degree in Special Education from BYU and used to teach resource at elementary schools. Now she stays home and just wishes for more time in the day.

As for her hobbies - Carrie says she is trying to convince herself that she LOVE's doing laundry and constantly feeding people. Other than that she enjoys activities with the kids, reading, camping, and writing. A few of her favorite things are: cookies and brownies, game shows, and she likes watching sports, but not playing them.

The craziest thing Carrie has done lately is getting colored elastics on her bottom braces, very wild. If she starred in a movie she'd like to be Sleeping Beauty! But, she says she'd probably be better suited to being a guest on Dr. Phil so he can help sort herself out!

Try It Thursday!

Cheese Steak Subs

*Makes about 4 sandwiches (more if you are serving kids and can get away with putting less meat on their sub)

2 tbl butter
1 onion, halved and sliced into thin half moons
2 garlic cloves, finely minced
1/4 tsp dried oregano
2 tbl A-1 steak sauce
1 pound deli roast beef, cut into 2-inch strips
Salt and pepper
4 (6-inch) sub rolls, split partially open lengthwise
8 slices provolone cheese

Preheat the broiler in your oven and adjust the rack to the upper-middle position. Meanwhile, in a large skillet, melt the butter. Add the onion and cook until softened and golden, about 8 minutes. Stir in the garlic and oregano and cook for a minute, until it smells fragrant. Add the A-1 sauce and the beef, stirring well to coat the beef with the sauce and onion/butter mixture. Cook until the meat is heated through, about 2 minutes. Season with salt and pepper.

Place the sliced rolls on a rimmed baking sheet. Divide the beef mixture among the rolls. Top with the cheese and broil until the cheese is melted, about 2 minutes (don't even take your hand off the oven door handle - stand right there so they don't burn! Serve immediately.

Cottage Cheese Pancakes

1 cup cottage cheese
4 eggs
1/2 cup flour
6 tbsp melted butter

Whip cottage cheese, eggs, flour and melted butter in a blender. This should be a thick batter. Test a small amount of batter on grill. Add a small amount of flour if it needs thickening. Make the pancakes about four inches in diameter.

Cook pancakes until golden, then flip and cook for an additional minute. Do not overcook. These pancakes are moist and should spring to the touch.

Enjoy with your favorite syrup, butter and powdered sugar!
