Sister Spotlight

Spotlight for Jan. 31
Keri Thompson
I grew up in Madison, Wisconsin. I have 4 brothers and 1 sister. I loved doing pottery in high school. I went to BYU and graduated in Art Education. I served a mission in Geneva, Switzerland and speak french. I taught High School Art for 3 years at an alternative high school in Provo. I've been married for almost 14 years and have 3 boys. Our family loves spending time reading together and going to Yellowstone a couple of times each year. I enjoy hiking, cross country skiing, re-arranging the furniture in my house (my kids have asked my husband several times: why does mom keep moving the furniture around? he just smiles and says because she needs to--I have a wonderfully patient and good natured husband), and playing with my kids.
I am serving in the Young Women's and love the girls who are in there.

Try It Thursday!

Garlic Chicken

12-oz. wide egg noodles
3 Tbsp. olive or vegetable oil
1 pound chicken, cut into 1-inch strips
2 garlic cloves, minced
1/4 cup water
4 green onions, chopped
1 Tbsp. butter
1/2 cup Parmesan cheese

Cook noodles according to package directions. While noodles are cooking, heat oil. Stir-fry chicken in oil until it turns white. Add garlic and green onions and continue stir-frying 3-4 minutes. Reduce temperature and add water. Allow chicken to steam until noodles are ready. Drain noodles. Dot with butter and sprinkle with salt. Fold noodles into chicken mix. Stir in Parmesan cheese.

Try It Thursday!

Crock Pot Lasagna-

8 lasagna noodles, uncooked
1 lb. ground beef
1 tsp. Italian seasoning
1 (28 oz.) jar spaghetti sauce
1/3 c. water
16 oz. cottage cheese
2 c. shredded mozzarella cheese

Break noodles. Place half of the noodles in bottom of greased slow cooker. Brown beef and drain. Stir Italian seasoning into meat and spread half over the noodles already in slow cooker. Layer half of the sauce and water, half of cottage cheese, and half of mozzarella cheese over beef. Repeat layers. Cover and cook on low heat 5 hours.
